Turkey with South of-the-Border Sauce
Serves: 4
WW points: 4
3 tablespoons flour
1/4 tsp salt and pepper
4 turkey breast cutlets about 4 oz each
2 tsp oil
2 zucchini cut in 1/2" chunks
1/2 cup onion chopped
1 tablespoon minced garlic
1/2 tsp chili powder (I used less than 1/4 tsp)
1 16-oz can crushed tomatoes
1. Mix flour, salt and pepper on a plate. Dredge cutlets in mixture, shake off excess.
2. Coat a large nonstick skillet with nonstick spray. Heat over medium heat; add 1 tsp. of the oil and swirl to coat bottom skillet. Add half the cutlets and cook 1 minute per side or until lightly browned and cooked through. Transfer to a plate. Repeat with remaining oil and cutlets.
3. Add zucchini and onion to any drippings in skillet. Saute 4-5 minutes until browned. Stir in garlic and chili powder; cook 1 minute. Add tomatoes; bring to a boil, reduce heat, cover and simmer 5 minutes or until zucchini is tender. Return cutlets just to heat through.
