Easy Chicken Fajitas
This is one of the first recipes I tried on my husband while we were just dating - and eight years later it's still a favorite around our home!
Easy Chicken Fajitas (10 servings)
1 tbs. olive oil
1 lb. boneless, skinless chicken breast, cut into strips
2 green peppers, cut into long strips
3 plum tomatoes, seeded and cut into long strips
1 pkg. Ortega Taco Seasoning Mix
1 pkg. of 10 Mission 98% FF Flour Tortillas
Heat the oil in a large non-stick skillet at medium heat and add the chicken. Stir fry until chicken is no longer pink and add green pepper strips and 1/2 of seasoning mix. Stir some more until the green peppers are softened, adding small amounts of water if needed (so that nothing sticks to the bottom and burns). Add the tomatoes and the rest of the seasoning mix (to taste) and stir, reducing the heat to low and covering for about 5 minutes. Warm the tortillas in the microwave for 1 minute and serve by having each person spoon a portion of skillet mixture into tortilla and wrap.

162 Cal., 3g. Fat, 2g. Fiber = 3 points per fajita
(In our family, hubby has 3, I usually have 2 - 3, and kids each have 2 and we have some leftovers).
