Greek Feta Chicken - 4points
Here it is again.
My family has enjoyed this for a long time. It originally came (I think) from the Detroit Free Press, I'm not sure when. It is elegant and easily prepared. A good "company" dinner. It freezes and microwaves well.
1 cup fat free plain yogurt
1 garlic clove, pressed
1/2 t. dried oregano
1/2 t. pepper
4 boneless, skinless chicken breast halves, pounded to 1/2" thickness
4 T. crumbled Feta cheese
1. In a medium bowl, whisk together yogurt, garlic, oregano and pepper. Add chicken and toss to coat. Cover and refrigerate for 30 minutes.
2. Preheat broiler.
3. Line broiler pan with foil and place chicken on foil, reserving marinade.
4. Broil 6 minutes.
5. Turn, brush with marinade. Sprinkle cheese evenly on chicken.
6. Broil second side 4 - 5 minutes, until topping is crisp and brown.
Four servings: 189 cal; 0 gr fiber; 4 gr fat (per Mastercook)
