Shrimp Dip - 2 points

(This is easy to make and delicious!)

1/3 cup sour cream, light
8 ounces fat-free cream cheese -- softened
1/2 cup celery -- chopped rather fine
1/2 cup onion -- diced fine
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper
14 ounces tiny shrimp, canned, drained, rinsed

Combine sour cream and cream cheese in a medium bowl, and beat at medium speed until smooth. Stir in other ingredients. Cover, chill. Yields 2 2/3 cups. Serving size, 1/3 cup. Notes: I suggest rinsing the diced onion and draining thoroughly before adding to the salad. A sweet onion such as the 1015 or Vidalia is good in this dish. I've substituted lime juice for the lemon, with good results. For more color, you could add a little bottled chili sauce. (1 Tbsp chili sauce = 0 points)

Serving Ideas : Serve with toasted pita bread or baked tortilla chips. (Count those pts separately!)
