Good morning, Running a little late this morning. I woke up on time, but then fell back to sleep for 10 mins. Falling back to sleep like that always leaves me feeling terrible when I get up. It will pass quickly though, once the coffee kicks in.

DS left for a few days of skiing at Waterville Valley last evening with girlfriend. Her family has a condo there. Thank goodness!! I love him dearly, but I LOVE my empty nest a whole lot more!

Sue: I remember when you had that massage last fall. Good for you, having another one!
Hey! How about sharing that recipe for Stroganoff please? I have never been able to find a decent, points-friendly one. Is yours a good one? BTW, Oh My! Am I ever loving that Cuisinart I told you about. I knew DS would love it also, and I was right. He has been using it all week, and even tried a recipe in it out of the little Cuisinart cookbook that came with it. This is a real lst. for him. He even gave a demonstration of it for his girlfriend. I have never seen him interested in any type of cooking before. The closest thing was the Vita-Mix. He loves everything that comes out of it, but finds it intimidating.

Good Morning Buddies,

I sat down at the computer about 1/2 hour ago to read email and call American Airlines to see if I could improve a flight in October using frequent flier miles. I'll know tomorrow. The two women who have helped with these reservation have been unbelievably nice. graemlins/thumbup.gif In that 1/2 hour, the snow and wind has started. Enough of this!

Dawna - I do need lots more sleep than you, but if I nap, the rest of the day is gone! I'm not going to move on the Cuisinart for a while. I think I've decided to replace my computer. DH has paid for several nice things for my last birthday, but will spring for a new computer as the final part. I'll keep you all posted. I would appreciate input from those of you who have purchased a PC within the past 6 months or so. I've looked online at Dell and I need the answer to one big question. If you want to make copies of CD's or DVD's in new systems, you do need two internal CD/DVD drives, yes?

Here is the recipe from WW In One Pot. I bought this book when I got my crockpot, thinking that it was ALL about crockpots. Not the case, but there are a couple of other recipes that look interesting. I tend to buy too many cookbooks, use them for relatively few recipes and use the internet to find most of my new recipes. Oh well, AAUW book sale benefits from my excesses ;)

Beef Stroganoff:

1-cup low-sodium beef broth
2 T flour
1 t dry mustard
1 pound beef tenderloin, trimmed of all visible fat and cut into 2 ½ inch strips (I love Sam's Club's tenderloin)
½ t salt
¼ t freshly ground pepper
2 t olive oil
1 small onion, thinly sliced
1 (10 ounce package cremini, white, or baby Portobello mushrooms, halved or quartered (I use more mushrooms – this week baby Portobello mushrooms were on sale)
¼ cup water
2 T light sour cream
2 T chopped fresh parsley
4 cups hot cooked egg noodles

Makes 6 servings

1. With a whisk, stir the broth, flour, and mustard in a large nonstick skillet until blended and smooth. Cook over medium-high heat, stirring constantly, until the mixture comes to a boil and thickens, about 2 minutes. Pour into a small bowl and cover to keep warm. Wipe the skillet clean.

2. Pat the beef dry with a paper towel; sprinkle with the salt and 1/8 t of the pepper. Heat 1t of the oil in the same skillet over medium-high heat. Add half of the beef and cook, turning once, until browned, but still pink on the inside, about 2 minutes. With a slotted spoon, transfer the beef to a plate; keep warm. Repeat with the remaining 1t oil and remaining half of the beef.

3. Add the onion to the skillet. Cook, stirring, until translucent, 3-5 minutes. Add the mushrooms, water, and the remaining 1/8 t pepper. Cook, stirring until the mushrooms are tender, 3-4 minutes. Add any accumulated meat juices to the sauce mixture in the small bowl. Return the beef to the skillet with the onions and mushrooms. Cook, stirring occasionally, until just heated through, about 1 minute. Transfer the meat mixture to a platter; keep warm.

4. Rewhisk the sauce mixture and pour into the skillet. Cook over medium-low heat, stirring occasionally, until the sauce is heated through, about 2 minutes. Remove the skillet form the heat and stir in the sour cream. Pour the sauce over the meat, then sprinkle with the parsley. Serve with the egg noodles.

Per serving (2/3 cup stew and 2/3 cup noodles); 311 Cal, 9 g Fat, 3 f Sat Fat, 80 mg chol. 255 sod, 32 g carb, 2g fib, 23 g prêt, 33mg calc POINTS 7

WI went well last night. I was down .4 pound, DH was free for the first time. Thanks for your encouragement yesterday.

Hey buddies, just stopping in for a quick note. DS and I met a friend for lunch today and had a nice time. Tonight my favorite shows are on TV, so I'm having a good day!

Dawna, I sure wish I could get by on just a little sleep. It would make having babies so much easier when they're up a lot in the beginning. I seem to need at least 7 hours a night, which I usually am able to get.

Sue, we have a fairly new Dell, which has been great. We have 1 internal CD/DVD burner, so we just copy the CD or DVD to our hard drive and then burn it to the new CD. That seems to work well for us.

Tracey, too bad you're busy today. I meant to tell you that my mom has had bad knees all her life and swears that glucosamine helps. I hope it keeps on helping you.

Kathy, how are you feeling today buddy? Did you see your doctor?

Hello to everyone: Steve, Sheryl, Cheryl, Cathy, Anna, Kat, Denise, Marie, Nancy, Lainie, Heidi...I'm racking my brains trying to think of who I'm missing. A lot of you have been MIA for a while, and I just hope you're all okay. smile.gif
