View Full Version : Lemon Zest Bundt Cake

1 pkg Lemon cake mix
1-15oz can of pumpkin
1/2 c egg substitue
1 tbsp water
1/2 c Powdered Sugar
1 tbsp Lemon Juice
1 tbsp Lemon Zest

1. Mix 1st four ingredients together. It will get very thick. I would recommend using a mixer, unless you want to build some muscle mixing by hand.

2. Pour into bundt pan spray.

3. Bake as directed on cake package. (Usually 350 degrees for 40 mins) Cool in pan for 15 mins & remove. Continue cooling til cake no longer warm to touch.

4. When cake is in the last cooling stage, make the icing. It's best not to make in advance as it hardens quickly. Stir together last three ingredients. Drizzle over entire cake & let it slide down the sides.

The recipe yields 12 slices (cut on the bundt rings) and is 2 pts per slice. Now these are rather large pieces. 1/2 a ring is still a really nice amount & it's only 1 pt per slice. graemlins/thumbup.gif

Yummy! I am definitely going to try that one. I may even do them in mini muffin tins, as portion control is not my forte. Thanks for sharing!

I love lemon flavored anything, so I think this is great. But, can you taste the pumpkin in it? I'm guessing it turns it a strange color, but I could live with that. I just can't stand the taste of pumpkin :confused:

Hey Gals .. I tried this on the weekend. It is unbelievably good!! It has a slight taste of pumpkin but mostly it is just very lemoney.

One question though: Did anyone else have trouble with the cake falling apart? Maybe I didn't leave it in the pan long enough to cool or didn't cook it long enough (it was in there for 45 minutes though). It tasted fantastic but would be nice if it looked like a cake! lol

Heather- Mine fell apart too. I think I took it out of the pan too soon. I may have to make this again very soon to see if I can keep it in one piece LOL graemlins/clown.gif

I made this for SuperBowl and it was yummy! Although I just spinkled powdered sugar on top! In fact I'm going to have a piece right now!!

Watch your points calculations based on the box of cake mix you use. Mine turns out to 4 pts a slice at 12 slices in the cake. I made muffins the last time I made it and counted them as 3 pts per muffin.
