Here it is Nikki, along with a few other great ones that Mom and I make.

WW Empenadas

Preheat over to 400 degrees

Brown 1/2lb ground turkey BREAST (only 1pt for 2oz, make sure it says BREAST)
1/2 onion chopped
Add 1TBSP tomato paste
2tsp chili powder
1/2 tsp salt
Cook until thoroughly cooked through and then cool.

Spray a baking sheet with nonstick spray. Brush edges of 30 wonton wrappers with egg white. Spoon approx. 1 TBSP of filling into the center of wonton and then fold in half and press to seal. Place empanadas on sheet adn bake about 8 minutes. Serve with Fresh Salsa recipe I posted above. YUM!! Only 2pts for 4 empanadas.

Fresh Salsa ( make with the empenadas) :bcb_up

I make this in the food processor.

3 tomatoes quartered
1/2 onion
Juice from 1/2 a lime
1 tsp salt
1 clove garlic
few sprigs of cilantro
1 jalapeno (gives it a kick, optional)

0pts and 1/2c is a veggie serving


Family Size Meatloaf (8 servings 11pts each)

1# ground Turkey
3# 80% lean beef

1/4c bread crumbs
1 TBLS oregano
1c applesauce
1 onion diced
1 pepper diced
salt and pepper
1 1/2 TBLS tomato paste diluted w/ water

Mix all together in a bowl (except tomato paste)
press beef mixture into a pan or over safe dish (11 1/2 X 8 1/2 X 3) or similar.

dilute tomato paste w/ water and spread on top of loaf.

Bake in over @ 375 degrees for approx. an hour.

* while baking empty grease out occassionally.



Home Made Spaghetti Sauce (2.5pts per cup)
VERY HEARTY AND TASTY!

2 packages of 99% FF Ground Turkey BREAST

Chicken Sausage (1 link = 3pts) use 5 links chopped up.

1 red pepper
1 green peper
1 onion
3 garlic cloves
1 c fresh mushrooms
1/2 tsp ground cloves
1 TBLS basil
1 TBLS oregano
salt and pepper

4 cans crushed tomatoe ( 28oz cans )
1 can 6oz tomatoe paste
3/4 to 1 can of water

pinch of red pepper flakes

Cook in 11qt stock pot and simmer for a few hours.



Meatballs (1pt each)

1lb - 1 package Ground Turkey Breast 99% FF
5lbs 90% ground beef

1/2 onoin or 1 small
1/2 green pepper or 1 small
1 TBLS oregano
1 c chopped mushrooms
1/4 cup liquid egg whites
1 tsp salt
fresh ground pepper
1c applesauce

mix ingredients and form balls - bake at 375 degrees until cooked thoroughly.

makes 74 meatballs 1pt each


Lasagna

Ingredients

spaghetti sauce from the above recipe
No boil lasagna noodle sheets
FF mozarella cheese

3 layers
- 2 sheets pasta
- 2 cups sauce
- 1/2 c FF cheese

Bake at 350 degrees for about 30 min

cut into 6 servings - 5 pts per serving

Great way to get a few veggie servings in AND your oil at the same time.

Fresh Green beans and/or wax beans.

cut the tips off and wash them.

Throw them into a big stir fry pan on the stove

add:

2 tsp EVOO
1-2 cloves of garlic minced
sliced red onion (thin and small, as many as you'd like)
salt
pepper
oregano or basil

stir to coat the green beans and cover, occassionally stiring so they do not burn.
finished when the green beans are a nice soft texture (not too soggy, still have a cripiness to them.

DELICIOUS!!

Here is the Apple Pie Crescent Rolls recipe!! They are soooooooo good. Try them with a scoop of lite or ff vanilla ice cream! Actually the Breyers light Vanilla Bean is the best!!

1 small apple
1/2 tsp splenda
1/2 tsp packed brown sugar
1/2 tsp cinnamon
1/2 tsp apple pie spice(i just use a dash of nutmeg instead of this since I didn't have any)
1(8 roll) tube reduced fat crescent roll dough

Preheat oven to 375. Peel, core and chop apple. Combine all the ingredients. Unroll dough and cut each roll in 1/2 so you have 16 pieces of dough. Flatten the wide edge of each roll out a little. Spoon 1 teaspoon of mixture onto each piece of dough and roll it up. Make sure to seal edges so apple doesn't leak out. Bake on cookie sheet for 12-15 minutes.

I will dig through my recipes and get some to y'all next week. I know promises, promises, promises.... I will try! I do have some that are my staples!

A new recipe a week is a good goal, and keep you out of a rut! (You know what a rut is: a coffin with the ends kicked out.)

I made this soup on Tuesday. It was a hit with the whole family and it came out of WW's:

Crockpot Chicken Tortilla Soup (3 Points)


16 Ounces Chicken Breast Halves Without Skin - cubed
30 Ounces Black Beans, Canned - undrained
30 Ounces Mexican-style Stewed Tomatoes - canned
1 Cup Salsa
4 Ounces Chopped Green Chiles
14 1/2 Ounces Tomato Sauce
2 Cups Reduced Fat Cheddar Cheese
Tortilla Chips


Combine all ingredients except cheese and tortilla chips into slow cooker. Cover and cook on low 8 hours. To serve, put a handful of chips into each individual bowl. Ladle 1/2 c soup over chips. Top with 1/4 cup cheese.

Instead of using the cheese on my soup, I opted for the FF Sour Cream, it lowered the points value, but I am not sure by how much...

Seriously though, it is an awesome soup.

Our WW leader gave us this

Brownie in a Cup 2 pts

4 Tablespoons FF Brownie mix (usually Krusteaz)
2 Tablespoons water

Mix well in microwave safe mug
cook in microwave for 1 minute

top with whatever you like I use 1/2 cup vanilla ice cream and a little SF caramel syrup makes it 4 pts for a super yummy brownie sunday.

I discovered a yummy, 4pt way to get in two healthy servings of EVOO and 1 milk serving w/ FF cheese.

Making Grilled cheese with 2 slices of light bread, spreading 2 tsp of EVOO onto two slices of bread and then 1 slice of FF cheese. It browned up really good and taste better than using butter. :bcb_up I figure, i'm going to have to use the two points to get my oils in anyway, so why not use it to make my grilled cheese. IT worked GREAT!!! have a side of FF chips and water and it's a good tasting lunch for 5pts.

Got this from Ellen. It is delicious and I wanted to post it here because I use it alot!!

Stuffed Pork Tenderloin-- BCB
main meals
POINTSŪ Value: 5
Servings: 4




Ingredients

1 small apple(s), finely chopped
1 clove garlic clove(s), minced
1/4 cup mushroom(s), finely chopped
1/2 small onion(s), finely chopped
2 Tbsp seasoned bread crumbs
5 slices Farmland Hickory Smoked Bacon - Center Cut
1 tsp dried sage
1 pound Pork, tenderloin, raw Instructions

Trim meat; slice a pocket lengthwise into meat, leaving ends intact. Mix next 6 ingredients; moisten with about 1 tsp water if necessary to hold together. Stuff pocket of meat; press meat together without dislodging stuffing. Season meat with pepper. Wrap bacon slices around tenderloin to encase meat ansd stuffing. Bake 375 for 40 min or until bacon is crisp.
