Tortellini Salad

2 pts for 1 cup
(hard to believe, but I ran it through SparkPeople, and that what it came up with)

1 c. cooked cheese tortellini
1/2 c. diced cucumber
1/2 c. diced tomato
dash salt
dash pepper
1/4 c. ff italian dressing

Combine all ingredients and enjoy.

This recipe sounds good. I bet you could add some carrots and onion for no additional points.

I make this using ff Ceaser and adding fresh brocolli. Everyone eats it up! I can easily make huge batches of this and take to family events. It is the most requested item of the kids - yes, I said the kids!!

I made a tortellini salad tonight, and it was very good. Dh loved it especially, which surprised me because he is not a pasta guy.
I used cucumbers, tomato, red onion and red peppers and for dressing I used italian dressing salad spritzer (quite a few sprays for the whole salad).
The only "problem" was that the fresh tortellini I bought worked out to 5 points for 1 cup. I'm going to try to find some lower point tortellini next time I go shopping!
