makes 6 servings - 1 1/2 points per serving
Here's a family favorite for warm weather days.
for the salad: 1 pound fresh green beans, trimmed & cut into 2" lengths
2 TB lightly toasted sesame seeds (2 pts.) :
Place seeds in dry skillet over med-low heat. Stir & shake skillet until seeds are lightly browned. Set aside.
Dressing:
1 TB finely minced ginger (0 pts.)
1 TB finely minced garlic (0 pts.)
1 TB Canola oil or other vegetable oil (4 pts.)
1 TB rice vinegar (0 pts.)
1 tsp. sesame oil (2 pts.)
1 TB reduced sodium Kikkoman soy sauce (0 pts.)
1 tsp. Splenda Brown Sugar Blend (1 pt.)
1/8 tsp. freshly ground black or white pepper
1) Blanch beans in boiling water for 2 to 5 minutes. I test for doneness
after 3 min. Beans should be slightly crunchy but not hard. When
cooked, immediately cool them in cold water to stop the cooking.
Drain and transfer to a serving bowl.
2) In a small bowl, combine all the dressing ingredients. Pour dressing
over the beans. Toss to coat well. Chill beans until serving time.
3) Just before serving the beans, stir in the toasted sesame seeds.
