My girlfriend made these on the weekend and they were fantastic.

Take a plum tomato and cut it length wise. Take the seeds out (or if you like them, leave it). Pour a bit of Italian Salad Dressing (fat free) on the tomato and put a bit of cheese (parmesan, mozz (part skim) on it and grill on t-foil
Depending on the cheese they could be a point per tomato!! They were really good.

Here's a variation that I like. I normally broil them, but you could sure do them on the grill, too.

Halve a large tomato horizontally, cutting a thin slice off the bottom half if necessary to make it sit level. Sprinkle with sea salt, pepper, and basil. Top each with a mix of 1 tsp bread crumbs and 1 tsp parmesan. Spritz with olive oil and cook to desired doneness. Scrumptious! :bcb_bigsm These are 1 pt each.
