Caramel Apple Salad (edited for pts. 12/3/2007)
5 med. Granny Smith or Brae burn apples, cored & chopped 10 pts.
1 8oz. can unsweetened crushed pineapple, DO NOT DRAIN!! 1pt.
1 1oz. box sugar-free instant butterscotch pudding
1 8oz. container fat-free Cool Whip 7 pts.
Mix first 3 ingredients well. Gently fold in Cool Whip. Chill
Total pts.=18 Yield—app. 7 cups 2.5 pts. per cup
The original recipe calls for adding 1 cup miniature marshmallows, but I HATE marshmallows!! Besides, it ups the points value a lot! If you don’t like pineapple, I have also make this with unsweetened applesauce—I used one of the individually packed containers—app. ˝ C. This is a seriously yummy “dessert” that also helps you get in your fruit if you’re not a big fruit lover.

I am so addicted to this stuff! My family loves it too. I take this to church functions as well and people really like it.
I also add mandarin oranges, sliced strawberries, sliced grapes and crush just a few points worth of peanuts into it. It's DELISH! :)
I also substitute the butterscotch pudding with vanilla if I'm out of the other.

I made this as a thanksgiving side dish. It was a BIG hit. The 2 year nephew gobbled it up.

I'm wondering about substituting FF Plain Yogurt for the Whipped Topping to make it Core/Simply Filling. I will try it and report back.
How well does this hold up in the fridge?

Made this completely Core/Simply Filling by:
Substituting FF Plain Yogurt 2 Cups and added a bit of vanilla.
This is pleasantly good. Not to strong, not to sweet, but good.

I made this last night, the only difference is that I just used 4 apples...and I have to say it is very good!

Maybe a little, but not brown. I guess the acid in the yogurt keeps them from turning. It is also amazing how long it lasts in the fridge.
This is a good different recipe.

I made this with 3 apples and the yogurt. I liked it but I am not sure if I would make it again. I think the pineapple gave it an unusual flavor. The salad did keep for a long time. I think I will just go back to slicing my apple up and dipping it into the butterscotch FF pudding.

I made this with Source Exotik yougurt and it is pretty good. I would make it for myself again, but not for a pot luck (the reason I made it today).
