I was hungry for potato salad and came up with this recipe. You may need to adjust some things according to your own tastes.
1 small potato, 150g (5.3oz)
2 tbsp reduced fat or fat-free mayo
2 tbsp fat-free buttermilk
1/2 small onion, diced
1/2 dill pickled, diced
1/2 tsp dried dill
1/2 tsp dijon mustard
Salt & pepper to taste
Boil the potato whole until fork tender, cut into cubes. Meanwhile, mix the dressing ingredients. Mix with the potato and serve warm or chill.
Makes 1 3pt serving.
