2 tb white wine vinegar
2 tb honey
3 c arugula, cleaned and torn (about 3 oz)
1 Fuji (or other sweet apple), cored and cut into chunks
3/4 c crumbed FF feta cheese with herbs
Whisk together the vinegar and honey. Combine the arugula, apple, and cheese in a salad bowl. Add the dressing and toss to coat; serve at once.
Makes 4 servings
