Cooking Light Holiday Cookbook

2 tablespoons minced shallots
2 tablespoons honey
1 tablespoon sherry vinegar
2 teaspoons walnut oil
1/2 teaspoon salt
8 cups torn green leaf lettuce
4 cups Belgian endive (about 3 heads)
2 tablespoons roasted unsalted cashews, coarsely chopped

1 combine first 5 ingredients; stir with a whisk. Add lettuce, endive and cashews; toss to coat. Serve immediately. Yield 8 servings (about 1 1/4 cups each)
