I've always wanted to try grilling with wood chips and I finally did tonight. OMG! Dinner was unbelievable!

I bought a bag of mesquite flavored wood chips at Menards (on sale for $.98 a bag! :) ). The directions said for gas grills to wrap 2 big handfuls of wood in tin foil, poke holes and place directly on the rack over the heat source. Preheat both sides (if you have them). When you place the food on, you turn off the side that you are putting the meat on. This is called indirect grilling. Try not to open the lid too much.

I just sprinkled my pork chops with a little salt and they were the best thing I've ever grilled! So tender and juicy and flavorful.

If you're using regular wood chips, you need to soak them for a few hours so be careful!

I highly recommend this and I'll be trying this with chicken breasts, whole chickens, turkey, etc!

My husband built us a fire pit, and we do not use the gas grill. Food cooked over wood is so much better. We like to add the Jack Daniels chips sometimes also.

I agree, dh grills this way and it is soooo flavorful.

Sorry I didn't see this sooner but I have a few Ideas for you. Soak your chips in water for an hour or so before you use them and they will steam and smolder and give a great flavor. Try some other flavor chips as well. Some of my favorites are Applewood, Maple, Hickory and Oak. You can generally find them in either the grocery store or a Home Depot or Lowes hardware with the grilling accessories. Another idea is to slow cook your meat by indirect grilling which I can explain if you wish and take a spray bottle and mist your food with apple juice or an apple juice vinegar mixture if you like a sweet and sour taste. Just something to try. My brother in law and I have been really doing a lot over the past few years working on grilling and bbq techniques and paraphenalia. Our dream is to open a grilling and bbq supply store in the next few years.

I have been grilling everyday I can. I prefer hickory chips to mesquite. The charcoal/hickory flavor is wonderful and for me means no sauces or gravy needed.
