Hello all,
I was searching for a way to use up some fresh cucumbers from my garden and found this recipe on www.allrecipes.com (http://www.allrecipes.com). I modified as below, to make it point- and Core-friendly!

Cucumber Salad
Servings: 10, 1/2 cup servings
Points: 0
Core
8 cucumbers, sliced thin
1 small white onion, sliced thin
1 cup white vinegar
1/2 cup water
3/4 cup splenda
1 tbsp. dried dill
Salt, to taste
Freshly ground black pepper
Slice cucumbers and onions into thin slices, and combine in large bowl. Combine vinegar, water and splenda over medium-high heat. Bring to a slow boil. Immediately pour over vegetable mixture. Mix to combine. Add spices. Allow to marinate in refrigerator for at least 2 hours. May be served cold, or at room temperature.
