Southwestern Egg Salad

This is a recipe from my meeting this week, I haven't made it but it sounds good (and I hardly ever eat eggs!)

Southwestern Egg Salad

6 hard boiled eggs
2 medium scallions, finely chopped
1 tsp canned green chilies, drained and finely chopped
1 tbsp minced cilantro
1/2 small red pepper, minced
1/4 c ff mayo
1 tbsp salsa
1/2 tsp ground cumin
salt and pepper to taste

Mash the eggs with a fork and then add the other ingredients. Serving suggestions were in a hollowed out red pepper or over a green salad.

The entire recipe is 13 points.

(I think you could make some awesome deviled eggs with this recipe!)
