This salad is great--but you have to like curry. I love it because you can get protein, fruit, and veggies in one salad!!

Curried Chicken Salad

4 C. (20 oz.) chicken breast, cooked, cubed 20 pts.
3 Granny Smith apples (4 C.), cored, chopped 4 pts.
½ medium onion, chopped
1 ½ C. celery, chopped
½ C. raisins** 4 pts.

Dressing:
½ C. fat-free mayo 2 pts.
½ C. fat-free yogurt 1 pt.
1 Tbls. Splenda
1-2 tsp. curry pwdr.
Salt & pepper

Mix all together. Store salad in the frig. Overnight to allow flavor to develop more fully.

Total pts.: 31 yield: 12 cups 2 ½ pts. Per cup
**Without raisins, this recipe is CORE, or count the pts.

You can make this with QUORN naked chiken cutlets and it's vegetarian..

This sounds really good. It made me think about an anciet WW Curried Chicken Salad. I think it went on a sandwich, but I always used to put mine on a bed of lettuce. It was made a little differenly than the one you've posted.

Do you by any chance have that old recipe?

I am going to make this and eat it wrapped in big lettuce leaves...I love curry, and chicken salad is one of my favorite things in the world...

I made this salad this week....it's AWESOME!!!! Thank-you so much. I made it for my sister and she really liked it too....I'll be making it again...it's a keeper :bcb_bigsm

I received a 5lb star this week at my meeting and they asked me how i was sticking with it and i told them i've been trying new recipes and mentioned this curried chicken salad that i got from this site and three people came up to me after the meeting asking for the recipe, it's a huge hit!
