View Full Version : Sesame Ginger Coleslaw-2 points

Compared with regular coleslaw, this slaw has 50% less calories and fat (most of that fat is healthful monounsaturated fat), no cholesterol, and twice the fiber. More important, it has twice the flavor and is rich in iron and folic acid, the b vitamin that boots memory and reduces heart disease risk. It takes less than 10 minutes to prepare and goes great with sandwiches or as a side salad along with fish or chicken for dinner.

Makes 4 servings

3 tablespoons sesame seeds (toasted)
4 cups of preshredded coleslaw mix or about 2/3 of a 16 oz bag
2/3 cup green onions, sliced
3 tablespoons rice vinegar
1 tablespoon fresh ginger, peeled and grated
1 tablespoon sesame oil
1 1/2 teaspoons sugar
salt and pepper, to taste

1. Toast sesame seeds in a nonstick skillet over medium heat until browned, about 4 minutes and set aside.
2. Combine coleslaw mix and onions in a medium bowl.
3. Blend vinegar, ginger, oil and sugar in a small bowl, pour over coleslaw-onion mixture, and blend thoroughly. Season with salt and pepper.
4. Let stand at least 5 minutes before serving (or can be refrigerated up to 2 hours). Top with toasted sesame seeds just before serving.

Calories per serving 103, total fat 7.5 (sat 1g), 29% carb, 2g fiber, 11% protein.

I brought this to the potluck and it was all gone! There was a ton of food and a lot of leftovers so I think the fact that it was gone was significant. It was super easy to make too.

Thanks for a healthier version of my favourite summer salad. :jump_jack It is very yummy the next day for lunch with chicken on it.

Oh, this sounds wonderful!!! I think I might try it with minced candied ginger and Splenda Blend.

Update- I used a packet of Splenda and a couple tbsp of minced candied ginger and just mixed it with as much vinegar as seemed tasty (I'm a dump cook). This slaw was just CRAZY delicious!!! :bcb_bigsm
