Do you have a good cabbage recipe that you would like to share? This is good and easy.
Pennsylvania Red Cabbage
2 tablespoons brown sugar
2 tablespoons vinegar
2 tabelspoons water
1 tablespoon healthy oil
1/4 teaspoon caraway seed (I omitted these)
1/4 teaspoon salt (I omitted this too)
dash of pepper
2 cups shredded red or green cabbage
3/4 cup coarsely chopped apple (1 small)
In a large skillet combine the brown sugar, vinegar, water, oil, caraway seed, 1/4 teaspoon salt, and a dash of pepper. Cook for 2 to three minutes or until hot, stirring occasionally. Stir in the cabbage and apple. Cover and cook over medium-low heat about 5 minutes or until cabbage is crisp-tender, stirring occasionally. Makes 3 or 4 servings.

Hello!!! Here's my family's favorite:
-1 entire head of cabbage, shredded thick into strips (or chunks)
-2T olive oil
-fresh minced garlic
-pepper
-potatoes OR rice
-4 C water
In a huge pot, heat the oil and brown the minced garlic slightly. Add the cabbage and then the 4C water. If using potatoes, put several small ones (or large chunked pieces) on the top of the cabbage but touching the water. If not using potatoes, cook rice on the side. Add the pepper to the pot and cover. Cabbage is done when the potatoes are done or when cabbage is tender but not mushy.

Cabbage Tomato soup
1 small head cabbage, chopped or shredded (I prefer the savoy type)
4 large carrots, chopped
4 medium onions, chopped. Brown in a nonstick pan first if desired.
1 tablespoon Italian seasoning
Add water to the above, to cover. Boil until the veg are done but not mushy.
Add:
1 can tomato sauce (I like Hunts spicy)
1 large can diced tomatoes
salt and pepper if needed, to taste
This makes quite a bit. You can add curry powder to some of it for a completely different taste. Nice served with a dollop of yogurt or ff sour cream. Add any type of beans, and drizzle with your healthy oil, for a complete meal.

This recipe sounds AWESOME!!! However I am not a big fan of carroway seed (read: I hate it). Is there anything I can use in place of it or just leave it out totally?

Hey, thanks everybody for the recipes. They sound great. I will be trying them. I too love cabbage. SkinnyJen, I also don't like caraway seed, and I just omitted them, in my cabbage apple recipe. It is a good easy recipe, just try it without the caraway seed.

Here's my favorite, really simple way to eat cabbage:
2 t toasted sesame oil
1-2 t minced garlic
1/2 bag shredded cabbage (w/ or w/out carrots, pea pods, etc.)
drizzle of soy sauce
sprinkle of sesame seeds
I sautee the garlic in the oil for a min, then add the cabbage and cook for @ another 4 min, stirring occasionally. Right before serving, I turn off the heat and drizzle on a little soy sauce. After dishing it up, I sprinkle on the sesame seeds. This is deceptively simple and oh-so-delicious! :D
