Hi Veggies!!
I didnt see a thread yet for this week, so I figured I'd start one!
I'm currently at my In-laws house. so far so good. I'm eating alot of salad, because most meals involve meat around here. however I went and bought som veggie potstickers and they are really good. We are going to eat chinese tonight, so i'm hoping there is some WW/veggie freindly choices.
We got a new set of pots and pans as a christmas gift.. woo hoo.. we really needed it since we lost all but our beat up old cookware in our move from California to florida 3 years ago. I'm also going to a big supermarket here on Wednesday that has alot of stuff i cant find at home.. it should help me to try out new recipes in the next few weeks. I'll let you know what i find and how the recipes turn out.
What is everyone up to? I know things are hectic this time of year, so hopefully a few people will have a chance to post. Hope to hear from ya'll soon!!:buddysmoo

Hi Veggies,

Hectic is right! For some reason our school district is letting us out only on the 23rd of Dec.! Crazy to teach right up to Xmas! Half the kids are leaving on family trips.

Anyhow, I am sick, my DH is sick, but I am not as sick as he is.... he has had a fever for four days, amazingly!

I have finally really gotten back on track, with WW. I was somewhat on track before, but after TG I was eating too many FPs and not watching the sweets.

Now, I am. It feels a lot better.

I feel in control, at last.
I just know that I am not the sort of person who can eat a bunch of junk and get away with it for long.

Anyhow....
I ate some great split pea soup this weekend, lots of red beans, Salvadorean style, and tostadas, Nicaraguan style.

The tostadas are a good low-point thing:

Toast the tortillas in the oven for about 8-10 min. until golden and still. (corn tortillas)

Smear a tablespoon or two of ff refried beans, lettuce or cabbage, sprinkle of salsa, cheese, avo, carrots, beets... etc.

Delicious.

Okay, I am coughing a lot, so must go.

Sorry you aren't feeling well!! i'll bet you are more than ready for X-mas break huh? Your food sound delish!!!
We just got back from seeing Narnia... it was good... funny, There is alot of fur in the movie.. I told DH.. I hope no animals were harmed in the making of this movie!! I'm going to have to go back and read the chronicals again.. i read them in like middle school, but dont remember much. Anywyas.. I'm off to bed!!
BTW... I've gotten no exercise in.. I feel so fat and sluggish!!!

Hello Veggies!

I made a great mushroom/green bean paté from an older Vegetarian WW cookbook. It still has the pts value of things though. I love this recipe! (Some of the recipes are really funky, though. Indian split pea cake? Who thought that up?)

Anyhow, the paté is almost all veggies, with some walnuts and tofu, spices and parsley thrown in! It is great on rye crackers. When I have more time I will post the recipe if anyone is interested.

I have been eating it all week as I have been busy and it is only about a pt a serving!

Anyway, I am having a hard time getting the exercise in too. It is cold, my feet are tired from standing teaching all day, I am so zonked feeling after work and really just want to sleep. Plus, it is rainy, so I can't even go walk in the woods without a rainsuit, and my rainsuit leaks.... Lots of excuses, but the fact is that it is easy to get exercise in the summer and hard in the winter. I am just not as apt to get my b00ty out the door and do something when it is pitch dark at 6 pm. But, the solstice is TODAY, so all is on the upswing!
