This came in my email this morning and I know this should go into recipes, just wanted to make sure y'all saw it first.....looks like a another delicious way to get a serving (or two!) of veg.
Bake-tastic Butternut Squash Fries!
(Serving Size: 5oz. of squash cut into fries, calories: 65, fat: 0g, sodium:
6mg, carbs: 16.5, fiber: 4g, sugars: 3g, protein: 1.5g)
Ingredients:
1/2 butternut squash
kosher salt
Directions:
Pre-heat oven to 425 degrees. Peel and de-seed your butternut squash. If
you're unfamiliar with handling these large items, you may have a little
trouble at first. They're fairly easy to peel, but you'll need a sharp knife to
cut them. Once your orange friend is peeled and sans seeds, slice it in half.
Then cut it up into french fry shapes. We like to use a crinkle cutter to make
authentic looking crinkle cut fries, but they'll work any way you slice 'em.
Place on a cookie sheet sprayed with non-stick spray. Cover lightly with
kosher salt (regular salt works, too, but we prefer kosher salt). Place tray in
your pre-heated oven and bake for 40 minutes or so, flipping halfway
through baking process. Fries are done when they are starting to brown on
the edges and get crispy.
Serve with ketchup, or however else you enjoy fries or sweet potato fries!
**We've been known to eat a huge 2-3 serving bowl of these for
lunch...they're awesome, healthy and packed with fiber!

That was from HG and I wanted to try it but the "rest" of her paragraphs always get cut off. It just cuts off in the middle of a sentence. I didn't get the full recepie.

I'm having these today. But for some reason the Butternut Squash here in Texas didn't get the memo that they are easy to peel and cut. I've got a big ole blister. :mad: :p

They taste kinda like sweet potatoes to me. Kinda sweet. Mine never get really crunchy unless I burn them. According to one of the nutritition sites I checked you can have up to 8oz of raw squash for 1 point. That's 100 calories/0 fat/5 fiber.

Just made these yesterday and they are THE absolute best fries I have ever had! If I never eat another regular potato fry, I will not miss them. They are awesome! (I did earn some activity points trying to peel and slice them, though!:) )
P.S. They don't really get crispy like a regular fry, but they are still delicious!

I've made these before and loved them. I made some last night and OMG.. just simple amazing. Drizzled my 2tsp evoo over the squash, spiced up with a lil seasoning and roasted on a high temp and I let them go a bit until they got a lil crispy. WOW.. dipped in ketchup who knows they're good for you!!!
If you haven't tried before .. you simply MUST this week!

What do you think would be the difference between using squash over sweet potatoes (which are MUCH easier to cut) for these fries?

Pat, I use sweet potatoes all the time for baked fries, I love them but I'm going to try the butternut squash, they seem to be less points
Raw butternut squash - 8oz - 1pt
Raw sweet potato - 8oz - 3pt

Pat, I read somewhere if you nuke the squash for a minute or 2 it's easier to peel. I haven't tried it yet though.

Maybe my Canadian squash's are easier to peel!!:bcb_grin I just used a potato peeler to get the outer layer off the squash then sliced in half. Once in half I scooped the seeds and then sliced into fries!
YUMMMM.. still dreaming about these.. my grocerystore was outta butternut, but I bought a different squash to experiment with!

Haha I made butternut squash the other day, and my finger still hurts from peeling it! :bcb_yuck: . It's like trying to peel a pumpkin!

I have a peeler that lookes sort of like a U with the blade going across the top of the U, instead of the straight type of peeler. I don't have any trouble peeling the squash with it.
