Doin' the best I can with what I've got.
Jeanette, I just made one up that I love so I'll post it here for you!
1 tsp. chipotle chile powder (I buy mine from www.penzeys.com)
1 tsp. garlic salt
1 tsp. dried oregano, crushed
1 tsp. mild chile powder (I grind my own dried poblanos)
1/2 tsp. onion powder
1/2 tsp. ground cumin
1/2 tsp. ground coriander
Mix it all up together. It has just enough bite to it and LOTS of flavor. You can adjust seasonings to suit your own tastes.
I use this as a marinade/rub by adding the juice of one large or two medium limes and a teaspoon of tequila - mix together well with the dry ingredients and use it to marinate pork chops or chicken. I also used it on a whole chicken - I loosened the skin all over the breast, legs, and thighs, and rubbed this all over the bird between the meat and skin, then rubbed some on the outside too and rotisseried it. Mmmmmmmm good!

Char: Thank you, thank you, thank you!! I got to thinking about it and I thought why not just use the spices for chili? Duh! But I know from experience, yours will be much better!! Thanks for sharing; going to make up some of this tonight, or I should say, after I get all the "right" chilis.Definately going to try this tho.
BTW Char, I no longer have to be jealous over the California meeting. F&S Board is getting one of their own meetings together, which I'm very happy to say, I will be attending!! I can hardly wait! It will be so much fun! [img]graemlins/crazy.gif[/img]
