Thread: White Bean & Garlic Dip

Smile White Bean & Garlic Dip

Here's a recipe I've been making for a long time. It's always the first empty bowl on the "nibbles" table. The only change I've made to make it more WW friendly, is that I no longer use the 1 can of refried beans seasoned with pork and 1 can of Cannellini. The flavor doesn't suffer at all!

2 15 oz. cans Cannellini beans, drained and rinsed
    1/3 cup fresh Italian parsley
2 TB fresh squeezed lemon juice
    1 TB olive oil
3 small cloves fresh garlic, peeled, flattened
salt and white pepper to taste

Combine all in food processor and process until smooth. Serve with crackers or chips of choice. 1 point per 1/2 cup serving.

Note: If you like garlic, you'll love this recipe!

Chefbna, I'll have to get back to you on that one. I don't have any white beans in the pantry! Should we always submit the point count when we post our recipes? My bad.

Hi chefbna. The points for the recipe as written above are 1 point per 1/2 cup serving.

Oh God! I can't wait to try this. All my favorites... garlic, beans (I am a self confessed fiber freak) and Olive oil!

Chefbna, Thanks to plcm111195 who refigured my calculations, you'll like this recipe even more. It's only 1 point per 1/2 c. serving. Enjoy, and pass the Beano

I made this and loved it!!!!And the low points makes it even better! what I did was left the oil oit of the actual dip, but then drizzled just a bit over top to get the intense olive flavor of my favorite e.v.o.o. I used raw zuchini for dippers. o points and very bland so all you tasted was the dip! Thanks again and again!

Would this be good with garbanzo beans instead of white beans? I've been looking for a garbanzo bean recipe similar to this one, but can't find one.

I would think you could use just about any bean you like. the chick peas would give it a little different texture...and the ingredients are about the same as hummus (except for that fattening but oh so good tahini)

this stuff is by far my favorite hunger buster. I make it up and have it in the fridge to snack on w/ veggies while I make dinner. By the time dinner is ready, I have scratched off a veggie serving with lots of protein and fiber and have less room for dinner!

I finally made this. I used dried parsley and one big clove garlic. It is a winner. I already had some on a Wasa cracker. Yummy. I love natural things ike this.

I liked this dip too , and I will make it again. It was a tad garlicky for me...I'll probably add cilantro, ginger and a dash of hot sauce next time (and use 2 garlic cloves instead of 3) to make it a bit zippy.

This does look interesting......and SiFi to boot !!!

My dip of choice of late has been the Roasted Onion dip on the SiFi Recipe boards, but this looks quick, easy.......and much less "labour intensive"......LOL !!!! Not hard to tell I prefer to spend as little time in the kitchen as possible.

Cindy........tell us how your modifications work out with the use of cilantro, ginger and hot sauce. I'm not a "wing it" cook. I always need a recipe in front of my face !!!

I made this dip 2 days ago. Although good, I'm thinking it needs some more zip. On the batch I made, I kept shaking on cayenne powder on each individual serving. Thinking I need to may need to add some more lemon juice to see how that affects the flavour. (Don't get me wrong, it's a good recipe.......I just like alot of flavour !!!)

Rollercoaster - the extra lemon juice makes it taste spoiled IMO. It was nasty, because I am like you - I like a lot of flavor. I think adding some cilantro, jalapeno, onion and maybe some de-seeded tomatoes (to lessen the runnyness) would make it really delish - kind of like a mexican bean dip?

    Trish........

Thanks for the input. The last time I made this dip, I added in some onion, fresh cilantro, and cayenne powder. My oh my, it was soooo goood !!!!! As tomatoes are kinda "nasty" this time of year.....a.k.a........no flavour, thinking I may add a spoonful or two of hot salsa, and see how it tastes.

If you want to add a little kick to it without adding salsa, habanero sauce is good. I usually put some in my hummus (about 1/2 teaspoon for 2 cans of beans). Or you could use Tabasco Chipotle sauce - that has a bit of a smoky flavor with some depth to it. I'm looking forward to trying this recipe - I love hummus, and this looks similar, but different. I also love flat-leaf parsley.

Sorry gals, I'm just now checking back. I loved the dip the second time around with a bit of cilantro, and hot sauce. I skipped the ginger, thought it might head me in the wrong direction. I did add a bit of onion and a couple shakes of red pepper flakes.... YUM!
