Thread: Shrimp and Pasta with spinach and lemony cream sauce

    Serves 5

    1 lb raw medium shrimp, peeled and deveined (36-40 pieces)
    1/3 cup sliced almonds
    1/4 cup dry white wine
    Vegetable Oil Spray
    1/4 Tsp garlic powder
    1/4 tsp ground white pepper, or to taste
    6 oz. vermicelli noodles
    3/4 cup nonfat or light sour cream
    2 Tbsp light stick margarine
    2 tsp fresh lemon juice
    1/4 tsp salt
    4 oz. Fresh whole baby spinach leaves or regular spinach leaves, stems
    removed and leaves
    2 Tbsp. Finely chopped green onions (green and white parts)

    Instructions

    Rinse shrimp and pat dry with paper towels. Set aside.

    Heat a large nonstick skillet over medium-high heat. Dry roast almonds in skillet for 3 to 4 minutes, or until they are beginning to lightly brown, stirring frequently. Transfer almonds to a small bowl. Set aside

    In small saucepan, bring wine to boil over high heat.

    Continue to boil for about 1 min, or until reduced to about 2 Tbsp. Remove from heat; pour into small bowl and let cool completely.

    Heat same skillet over medium heat. Remove skillet from heat and spray with vegetable oil . Return to heat and add shrimp.

    Sprinkle shrimp with Garlic powder and pepper. Cook 8-10 min, or until opaque in center, stirring frequently.

    Meanwhile, cook noodles using package directions omitting salt and oil. Drain well.

    In the saucepan used for wine, heat sour cream and 1 Tbsp margarine over med low heat for 2-3 minutes, or until margarine has melted and mixture is thouroughly heated, stirring frequently. Remove from heat.

    Whisk in cooled wine, lemon juice and salt. Cover to keep warm.

    When shrimp is cooked, stir in 1 Tbsp margarine.

    Add spinach, and stir until wilted, about 2 minutes.

    To assemble, spread drained pasta on serving platter, spoon sour cream over pasta, on top with shrimp mixture.

    Sprinkle Green onions and almonds over all.
