Thread: Calling all Crockpot Mavens.....

    Hi everyone! I've been going crock pot crazy lately and everything I've made has been from here! My DH is in heaven with all the great cp recipes I have been trying! Last night he asked me to see if I could find a cp recipe for I'm turning to all of you to see if anyone has tried doing meatloaf in the cp, how it turned out, and what kind of recipe you used. Any help would be greatly appreciated!

    Here is a recipe I found in a crock pot cookbook. It was not originally WW but I made a few small changes to cut the fat.
    Meat Loaf Italian Style

    1 8oz can pizza sauce divided
    1/4 c egg substitute
    1/2 c each chopped onion & bell pepper
    1/3 c seasoned dry bread crumbs
    1/2 tsp garlic salt
    1/4 tsp black pepper
    3/4 lb extra lean ground beef
    3/4 lb ground turkey breast
    1 c shredded low fat mozzarella cheese

    Reserve 1/3 c pizza sauce, cover and refrigerate. In bowl, combine remaining pizza sauce and egg substitute. Stir in onion, bell pepper, bread crumbs and salt & pepper. Add ground beef and turkey and mix well. Form meat mixture into a loaf and place on 3 strips of foil that have been overlapped to form an * shape. Transfer loaf to any size crockpot and cover and cook on low for 8 to 10 hours, or on high for 4 to 6 hours. To ensure doneness insert meat thermometer into center of loaf. It should read at least 170 degrees F. Spread loaf with reserved 1/3 c pizza sauce and sprinkle with mozzarella. Cover and continue cooking for 15 min or until cheese is melted. Using foil strips lift meatloaf from crockpot and transfer to serving plate. Discard foil strips . Makes 8 servings @ 234 cal, 11 gr. fat & 1 gr fiber

    Here is a recipe from Fix-It and Forget-It Cookbook:

    Meatloaf Dinner/ 4 servings

    6 potatoes, cubed
    4 carrots, thinly sliced
    1/4 teaspoon salt
    1 egg, slightly beaten
    1 large shredded wheat biscuit, crushed
    1/4 cup chili sauce
    1/4 cup finely chopped onion
    1/2 teaspoon salt
    1/4 teaspoon dried marjoram
    1/8 teaspoon pepper
    1 pound lean ground beef

    1. Place potatoes and carrots in slow cooker. Season with salt.

    2. Combine egg, shredded wheat, chili sauce, onion, salt, marjoram, and pepper. Add ground beef. Mix well. Shape into loaf, slightly smaller in diameter than the cooker. Place on top of vegetables, not touching the sides of cooker.

    3. Cover. Cook on low 9-10 hours.

    Variation: Substitute 1/2 cup bread crumbs or dry oatmeal for crushed shredded wheat biscuit.
