    I just tried this for the first time yesterday, and it's great. Wonderful for leftovers.

    Curried Lentil Soup
    4 c hot water
    1 can (28 oz) crushed tomatoes
    3 medium potatoes, peeled and diced
    3 medium carrots, peeled and thinly sliced
    1 lg onion, chopped
    1 celery rib, chopped (opt)
    1 c dry lentils
    2 garlic cloves, minced
    2 bay leaves
    4 t curry powder
    1 1/2 t salt (opt)

    In a slow cooker, combine all ingredients; stir well. Cover and cook on low for 8 hours or until vegetables and lentils are tender. Discard the bay leaves before serving.

    Yields 10 (1 c) servings, one serving 169 cal, 150 mg sodium, 1 g fat [3 points]

    I made this and it is okay. I will definitely be eating the leftovers, it's a nice source of veggies! I just feel it could have used some more OOMPH from spices and seasonings. Maybe I'll play around with it in the future.
