    CROCK POT JAMBALAYA Entree 8 Servings 4 points per serving

    A one dish meal covering all of the food groups!

    Fiber : gr Calories: Fat: gr Serves: 8

     Chopped onion 1-1/2 cups
     Chopped celery 1/2 cup
     Canned tomatoes with juice (broken up) 14 oz.
     Medium green pepper, chopped 1
     Cubed ham 1 cup
     Boneless, skinless chicken breasts, chopped 2

     Beef bouillon powder 1-1/2 tsp.
     Hot water 1 cup
     Garlic clove (or 1/4 tsp. garlic powder) 1
     Dried whole oregano 1/2 tsp.
     Dried sweet basil 1/2 tsp.
     Salt 1/2 tsp.
     Pepper 1/4 tsp.
     Cayenne pepper 1/4 tsp.
     Parsley flakes 2 tsp.
     Ground thyme 1/8 tsp.
     Granulated sugar 1 tsp.

     Cooked frozen shelled shrimp (thawed) 1/2 lb.
     Cooked white rice 2 cups

     Put first 6 ingredients into 3-1/2 quart (3.5L) slow cooker. Stir.
     Stir bouillon powder into hot water in bowl. Add next 9 ingredients. Stir well. Add to slow cooker.
     Stir. Cover. Cook on Low for 8 to 9 hours or on High for 4 to 4-1/2 hours.
     Add shrimp and rice. Stir. Cover. Cook on High for about 30 minutes until shrimp is heated through.

    I tried this yesterday and it is really good

    Total points are 32. This makes 8 servings so 4 points per serving.

    This recipe may have finally convinced me to get a crock pot!!

    BUT, unless I'm totally blind (which IS a possibility at this early hour of the day), how many points is it???

    Made this tonight. It is extremely good. I ate on serving and DH and DS ate the rest of the pot.

    I made the recipe this week and was very pleased. I haven't had jambalaya since I started dieting because of the fat content and was happy for the treat. I did find it needed more of the herbs so doubled it for the remainder of the servings. I faithfully portioned out my 8 servings. 4 WW points isn't much and I still had lotsa points left at the end of the day. When I reheated a portion I sauteed it in 1 tsp EVOO to flavor and "grease" it up a little more. I am likely to eat a portion and a half for 6 points for the remainder, depending on the rest of the day's plans. The 4 point portion is enough for a lite meal.
