Easy Black Beans and Rice
Serves 4; 4.5 points per serving

1 1/2 cups uncooked instant brown rice
1 15 oz. can black beans - drained and rinsed
1 14.5 oz. can Mexican style stewed tomatoes - undrained
2 tablespoons 40% less sodium taco seasoning mix

1. In medium saucepan, bring 1 3/4 cups water to a boil. Stir in rice. Reduce heat to low; cover and simmer 10 minutes or until water is absorbed.

2. Meanwhile, in another medium saucepan, combine black beans, tomatoes, and taco seasoning mix. Bring to a boil. Cook over medium heat for 5 minutes, stirring occasionally.

3. To serve, spoon bean mixture over rice. If desired, garnish each serving with nonfat sour cream and chopped fresh cilantro.

NOTES: For a milder version, use less seasoning mix.
