Thread: Lentils & Rice w/Peppers

    This is something I just made.. The recipe is from a friend who is Indian...

    Saute 1/2 onion chopped, & 1/2 EACH red, green & yellow peppers in 1 T olive oil.

    Stir in 1 c uncooked regular white rice & 1/4 c red lentils.

    Stir in 3 to 3-1/2c water, 1/4 c raisins, salt & pepper & cumin to taste & scant 1/2 tsp tumeric.

    Bring to boil. then cover & simmer til liquid is absorbed.
    I made this in a 3 qt saucepan.

    I figured the total points for the whole recipe comes to 20.5.

    I measured out about 6 cups.. So you could figure 3.5 points for a 1 c serving..

    This is different & really tasty...

    I made this with Jasmine rice...Excellent!

    I wanted to try bulgar to lower the points, but I was out of bulgar [img]graemlins/sobbing.gif[/img] ...so I used my trusty cracked wheat! I used "2" tsp. of cumin and it was DELICIOUS...

    I KNOW this would be wonderful with BULGAR!! You gotta' try it!! I'm counting it as 2 points per cup. The red lentils dissolve into the dish and are wonderful~ Carol

    This sounds really yummy. However, I've never cooked with lentils. Are these dried right out of the bag, or is there some other version of lentils ?

    I guess I'm lentil challenged...LOL
