Thread: Vegetarian "Unstuffed" Zuchini

    This recipe was shared by a nonWW vegetarian friend & is soooo good!( & fast & easy)

    1 T olive oil ( orig recipe called for 2T, you can easily reduce it to 1 tsp if you like)
    1/2 medium onion chopped
    2 garlic cloves,crushed
    1-2 med zuchini, diced
    3 roma tomatoes, diced ( in a pinch, I've used canned, diced tomatos drained,but it's much better w/fresh ones.)
    1 (15oz) can chickpeas, rinsed & drained
    Optional: 10 small black olives chopped
    seasonings to taste: parsly,basil, black pepper

    Heat oil & saute onion & garlic til soft..
    Add remaining ingredients, cover & simmer til soft or to consistency of your preference.

    Serve over 1/2 c cooked brown or white rice.

    Point wise, a can of chick peas is 3.5 points, add 3 for T of oil + .5 for the onion + 1pt for olives...Depending on how big the zuchini & tomatoes are, yourr final yield may vary...I made on Fri w/only 1 zuchini & yielded 3 c.. 1 cup serving... but it's low points & so tasty... I also add 1/2 T Kraft 2% finely shredded sharp cheddar to my serving for extra 1/2 pt..
