1 small onion, chopped
1 small zucchini, thinly sliced
1 small yellow squash,thinly sliced
1 glove garlic, minced
1 can (11 oz) fat free refried beans
8 whole wheat tortillas (8")
1/2 C shredded reduced fat cheddar cheese
1 C salsa

Coat a large skillet with nonstick spray. Warm over medium-high heat. Add onion, zucchini, squash and garlic. Cook, stirring occasionally, 7 minutes, or until vegetables are tender.

Spread beans evenly onto each tortilla. Spoon veggies evenly onto 4 of the bean covered tortillas. Sprinkle cheese over veggies. Top with remaining bean covered tortillas.

Place a quesadilla in the skillet. Cover and cook over low heat, 5 mins, turning once, or until heated thru. Repeat with each remaining quesdailla. Serve with salsa.
