    Green Enchiladas with TVP

    Ingredients

    2 cups TVP (dry)
    1 3/4 cups FF beef broth (2 14 oz cans)
    1 medium onion,chopped
    1/3 small head of cabbage, sliced very thinly (or 1 ½ cups preshredded)
    1 small can diced green chilies
    ½ envelope taco seasoning (I used Taco Bell brand)
    3 oz. reduced fat Mexican style cheese, Grated
    ¼ cup Tostitos Salsa con Queso cheese dip
    1 jar (about 12 oz.) Herdez or other brand mild green salsa
    1 can (28 oz.) Green Enchilada sauce
    24 small corn tortillas

    Instructions


    Bring broth to a boil, then pour over TVP in large bowl. Allow to rehydrate 5 minutes. Meanwhile, cook onion til soft in microwave. Add cabbage, cook until wilted down. Add with green chilies and taco seasoning mix to TVP. Allow to cool slightly. Stir in the Tostitos Salsa con Queso. Heat tortillas in opened package in microwave 1 minute. Pour about a cup of the green salsa in a bowl large enough to hold the tortilla. Dip tortillas, one at a time, into the sauce, then put about 1 heaping tablespoon of filling onto each tortilla and roll up. Place in 13x9 baking dish in which a little green salsa has been tipped to coat the bottom. Repeat til filling and tortillas are all used. Pour any remaining green salsa and the green enchilada sauce over and around the enchiladas. Sprinkle top with shredded cheese, bake at 350* 20-25 minutes or til cheese starts to bubble.

    Special Notes


    I based the serving on 3 enchiladas per person. This made 2 13x9 pans of enchiladas! Serve with FF refried beans and bulgur cooked with salsa (spanish rice style)(count points!) 2 points per enchilada, by my calculation, using tortillas that were 1 point each. TVP can be purchased at any health food store, such as Whole Foods - I buy it there in bulk.

    And another note - I'm one of those "cook by the seat of my pants" type cooks, so things vary depending on what I have in the kitchen...i.e., sometimes I skip the cabbage if I don't have any , sometimes I add leftover grilled veggies, chopped up, sometimes I skip the Tostitos Salsa con Queso and just put extra shredded cheese (I currently really like the Veggie Shreds Cheddar) - so this recipe isn't set in concrete. Play with it and have fun! DH begs me to make these frequently!

    Bumping up and adding a note: recently I've started making this as "Green Enchilada Pie" because I was too lazy to roll the tortillas!! I use 10 tortillas per pan (so you cut out 2 points by using 2 less tortillas per pan) - cut 6 of them in half, use half of THOSE on the bottom of the 9x13 pan, and two whole ones in the middle...spoon half the filling mixture into each pan, then cover with the remaining tortillas, pour the sauces over the whole works, sprinkle with a little shredded RF/FF cheese of your choice, and bake til bubbly. Cut into 12 squares per pan to serve.

    Charski, I made the casserole version of these awhile back. It made a lot so I froze some and really stretched it out. My DH particularly likes this casserole because a meal without meat just ain't a meal.

    I also discovered from using the con queso cheese dip that it is very point worthy. A little goes a long way in flavor and I can substitute this in a lot of recipes and save points over using shredded cheese. Very cool. [img]graemlins/bcbsalute.gif[/img]

    I finally made these today. They were fantastic. DH even though they were good. He had no idea what was in them. Now I will look for more recipes with TVP.
