Thread: Mockamole (mock guacamole)

    Mock-a-mole

    1 pound fresh asparagus
    2 lemons, juiced, discard rinds
    cup chopped onion
    1 tsp Worcestershire sauce
    tsp onion powder
    tsp. Jalapeno pepper powder, optional
    tsp garlic salt
    1 tsp dried cilantro flakes
    tsp cumin
    tsp red pepper flakes
    2 tbls FF sour cream
    1 tbls ff mayo

    Break off woody stems of asparagus and cut into 1” pieces. Put in covered microwave safe casserole with about a tablespoon of water and microwave on High 5 minutes, stir to redistribute, and microwave on High additional 2 minutes. Drain REALLY well and let cool.

    Process asparagus in food processor or blender til of thick paste consistency. Add remaining ingredients except onions, and pulse to blend. Add onions, stir, and put into container with lid. Chill well and serve.

    Makes about 2 cups

    Notes: in this last batch I made, I subbed sliced green onions for the chopped onions and subbed about 2 tablespoons finely minced fresh cilantro for the dried. I like mine spicy but Cismee does her a little differently, she adds hot salsa to the mix for spice and because she likes the tomato in hers. I'm a purist and prefer to serve my mockamole with fresh salsa alongside rather than mixed in.

    It truly amazed me, and DH too, how GOOD this is and how close to the "real thing" it tastes!

    Feel free to adjust seasonings to your own taste.

    Charski - here is another recipe that I have used and found to be very good,

    Don't Mock This Guacamole

    Source: quilting lady

    1 1/2 cups frozen peas, thawed
    1 avocado
    1/4 cup finely chopped red onion
    1/4 cup chopped cilantro
    1 tablespoon fresh lime juice
    1 1/2 teaspoons finely chopped pickled jalapeno
    1/2 teaspoon salt

    1. In food processor, process peas until finely chopped. With potato masher or fork, mash avocado until not quite smooth (leave it just a little lumpy).

    2. Stir in onion, cilantro, lime juice, jalapeno, salt and peas. If not serving right away, place a sheet of plastic wrap on the surface and refrigerate until serving.

    Notes: Makes approx. 6 - 1/4c servings.

    I love you two! I'm a guacaholic and was afraid I'd have to forego.

    (I'm very, very new to WW and so far, I love it. This I can do).

    I have that recipe with the peas too, but the one with asparagus is 0 points per serving so it is great for those of us who want to eat LOTS of guacamole! And the amazing thing is that it tastes so much like the "real thing" that even my picky DH loves it...........

    DH loves this, but he can totally tell the difference. (I can too, but heck, I made it so I should know).

    Avocado has a slightly different "tang" to it than asparagus, but all in all,

    Both of these are good. I do like the aspargus better mostly because of the 0 points. Thanks to both of you. [img]graemlins/bcbsalute.gif[/img]

    To me mock-guac is the only use for canned asparagus. I stock up when I find it on sale. My fresh asparagus would never make it long enough to turn into guac. I love fresh asparagus just barely warmed through. But I digress. I take a can of asparagus and just add my favorite salsa of the week and a bit of FF or LF mayo or sour cream and generally scarf down the whole thing.
    Should have added this to the zero point thread.
    I might just have to make some tonight.

    Well, THAT'S a good thought, Joanne! It just doesn't seem right to do this to fresh asparagus to me, either?!!
